To celebrate National Prosecco Day we’ll be selling hibiscus prosecco cocktails for £7, or paired with one of our specialty ice-cream macaroons for £8 for this weekend only. Not only are they sweet and refreshing, but they’ll also make a great addition to your instagram feed – you can never post enough pretty drinks!
For all the fans of bubbly out there, we’ve also found three amazing prosecco based cocktails to get through the English summer:
Tropical Mango & Lime Bellini (adapted from Cook the Story)
A simple recipe that requires only three ingredients – it’s refreshing enough to go with a late brunch. You can really make this recipe your own by choosing a blend of fruits, or even adding coconut liqueur for a fizzy pina colada-style drink.
This cocktail pairs perfectly with our mango and passionfruit macaroon, available in our shop all summer!
Ingredients (to make a pitcher serving 6):
- 1 cup diced mango (fresh or frozen)
- 3 tbsp fresh squeezed lime juice
- 1 bottle prosecco
Blend the mango until smooth with the lime juice, then measure about 2 tbsp of the purée in each glass and top up with prosecco
Sparkling White Sangria (adapted from Once Upon a Chef)
This fruity Spanish-style sparkler is a light and fruity alternative to the rich red sangria and requires brandy, orange liqueur, lemonade and lots of fruits!
Enjoy this drink with our light fresh lemon macaroon to balance the sweetness of the sangria perfectly.
Ingredients (to make a pitcher serving 4):
- 2 tbsp brandy or cognac
- 2 tbsp orange liqueur (such as Grand Marnier)
- 5 tbsp sugar
- 250ml lemon-lime soda
- 1 bottle prosecco
Chopped fruits: 1 orange, 2 limes, 1 small apple, 1 nectarine, a few frozen grapes
Dissolve the sugar with the brandy and orange liqueur. Squeeze the juice from one lime and half of the orange, then add the remaining fruit to the pitcher. Top up with the prosecco and soda, then leave in the fridge for at least half an hour to absorb the flavours.
Raspberry Vodka Fizz (adapted from Pinch of Nom)
Raspberry and prosecco go hand in hand like peanut butter and jelly, like Bonnie and Clyde (like macaroon shells and ganache!). This particular recipe is calorie-conscious, made with diet lemonade to cut down on the sugar.
Of course, our fresh raspberry macaroon with real raspberry pieces goes perfectly with this cocktail, and also has less than 60 calories per piece!
Ingredients (to make a litre pitcher):
- Diet Pink Lemonade
- 25ml raspberry vodka (like Absolut)
- 125ml prosecco
- Ice cubes
- Frozen raspberries
Add the ice cubes and raspberries to a pitcher, then pour in the vodka and prosecco. Stir then top up with pink lemonade to fill.
