So what is a Macaroon???

A Macaroon is a sweet meringue based confection, made with egg whites, icing sugar, almond meal and food colouring.

There are loads of debates on who invented the macaroon. Some say they were invented by the Arabs during their occupation of Sicily as long ago as 827. They made nut based sweets and baked them with almond cream inside. These various sweet deserts were called Maccarunis from wheres todays name Macaroons is derived.

Another thought is that they were invented back in the 8th century at a French monastery in Comery and others claim they were invented in Spain.

Traditionalists, however maintain that the macaroon was invented by the chefs of italian monks who came to France to look after the needs of Queen Catherine de Medici.

It wasn’t until the 1930’s  that the macaroon started to be served in pairs. Typical Parisian style macaroons were  presented with ganache, buttercream or jam filing sandwiched between two macaroon cookies. It made the treats moist and they easily melt in the mouth.

There is some uncertainty as to whether the name macaron or macaroon should be used. In America they tend to call them the French way of macaron. In the UK however we tend to call them macaroons just like we spell cartoons or balloons,

Macaroons come in a whole variety of flavours, these range from raspberry and strawberry, chocolate to mango and cinnamon to rose and violet. Our macaroons come in no less than 14 different flavours. Open your mind to all the options.

How are Macaroons Made?

Today there are two methods of making a macaroon, the French method or the Italian method.

The French method is to whisk egg whites until they form stiff peaks of meringue and then add the sifted sugar and ground almonds, folding gently until the correct consistency is reached. This process of knocking out the air and folding is called macarongue.

The Italian method involves mixing the egg whites with a hot sugar syrup. This is more difficult as you need the melted sugar syrup to be at an exact temperature.
